Isomaltulose (6-O-α-D-glucopyranose-D-fructose) is a crystalline reducing disaccharide formed by the α-1,6 glycosidic bond of glucose and fructose. Its molecular formula is C12H22O11•H2O. The appearance is similar to white sugar, consisting of orthorhombic crystals containing one molecule of water.
As a low GI sugar, it does not cause rapid increases in blood glucose, providing stable and sustained energy for the human body.
